A menu by Chef Andrea Delvalle for AWS, conceived as a journey through the past, present, and future of Colombian cooking.
Today, I want to invite you to travel through Colombia in a different way: through three dishes and three moments in our history.
I’m Andrea Delvalle, chef of Encuentro and your guest chef. Welcome.
A menu, a team, and an atmosphere telling one shared story.
Simple flavours that have lived in our kitchens for generations.
Colombian roots seen through a contemporary lens.
Something universal made unmistakably our own.

Corn, farmer’s cheese, and honey are simple ingredients that have been present in our kitchens for generations.
The sweet corn envuelto with farmer’s cheese and honey represents memory, tradition, and the place we come from.

A Colombia that preserves its roots while continuing to transform them.
Poached eggs over fresh tomato, gratinated Paipa cheese, and crispy quinoa: familiar ingredients treated through a more contemporary lens.

Brioche French toast with cuajada cream and guava jelly takes something universal and makes it unmistakably our own.
The future appears when a familiar recipe meets Colombia’s memory, ingredients, and curiosity.
Innovation does not necessarily mean forgetting what already exists. Sometimes it means taking the best of the past, understanding it from the present, and finding a new way to carry it forward.
This is Contemporary Colombia: a Colombia that remembers where it comes from, enjoys where it is, and is deeply curious about what comes next.

As each dish found its place at the table, Chef Andrea and the Encuentro team managed the rhythm, temperature, and detail of service.
That invisible work allowed the menu to feel like one continuous conversation, from the first envuelto to the final ribbon of guava.

The menu opened a conversation between memory, transformation, and curiosity; the table made that conversation a shared one.
Between colleagues, dishes, and new ideas, the experience turned an executive meeting into a collective memory of Colombia.

Encuentro designed the setting with tropical plants and flowers, extending the menu’s story throughout the space.
Colour, texture, and brand identity came together in a warm landscape that supported the conversation without competing with it.
